Superfood Fruit salad
Ingredients

1 pink grapefruit
1 yellow grapefruit
150g blueberries
1tbsp pomegranate seeds
300ml low-fat Greek yoghurt
1tbsp runny honey
1 tbsp nibbed pistachios

Method
  1. So to make this vitamin and antioxidant packed breakfast dish start off by preparing the grapefruit. Slice off the top and bottom, then with a sharp knife cut closely down the side, discarding the skin/rind.
  2. Then simply mix the segments with the blueberries and pomegranate seeds (this can be done the night before to save time in the morning).
  3. Serve with the honey-drizzled yoghurt and a sprinkling of pistachios.
