Smoked Mackerel, apple, potato and curly endive salad
Ingredients

200g New potatoes
2 Apples
150g Curly endive (or any of your favourite leaves)
4 Smoked Mackerel fillets
Juice of half a lemon
Drizzle of olive oil

Dressing
1 tbsp Horseradish sauce
2 tbsp Sour cream
Salt and pepper

Method
  1. Firstly place the potatoes in a saucepan, cover with water and bring to the boil. Then turn down and simmer for 15-20 minutes or until cooked. Then drain off, cool and dice.
  2. Take the apple, de-core, peel and dice. Then mix the apple, sour cream, horseradish and potatoes all together. Season well.
  3. Mix the salad leaves with the lemon and oil, and pile on to the plate.
  4. Top with some of the potato mix and then a fillet of Mackerel.
